We roast to order on Mondays and Wednesdays and ship the following day. Orders will be included in a roast if they’re received by 5pm Eastern Time the day before we roast.

This coffee was produced by smallholders in the town of Pitalito in Huila, Colombia. Producers pick, wash, and dry their coffee at their own farms. The EA decaf process uses ethyl acetate, an all-natural byproduct of sugar cane fermentation, to safely remove caffeine without harming flavor. The EA process has become our only method of decaffeination because it uses no harsh or toxic chemicals and has minimal impact on flavor, in fact often bolstering sweetness and fruitiness in the cup.
Another big advantage, and one of the most important for us, is the fact that Colombian coffee decaffeinated with this method is processed in Colombia with Colombian-grown sugar cane. This reduces the carbon footprint of shipping transportation and increases the economic value for the producing country. Compare this with other popular brand name decaffeination methods (ahem, Swiss Water Process) that require shipping to British Columbia for processing, before being re-routed to its final destination, in our case the Port of New Jersey.
This is our first year buying Colombia Decaf Pitalito, and our fourth year buying decaffeinated Colombian coffees through Red Fox Coffee Merchants. We wrote a forward contract with Red Fox to buy 10 bags of this lot. We scored it 86.5 points and purchased 10 60kg bags for $4.75/lb EXW, on a day when the Coffee Commodity price was $1.92/lb.
