On his 16 hectare farm El Porvenir he uses his mastery of agronomy to get the best out of his Pink Bourbon plants, and his early investments in the variety and wild success with it helped to raise its profile from obscurity to massive popularity. He continues to be one of the cultivar’s leading experts in Huila, consistently producing some of the best Pink Bourbon on the market.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003ePink Bourbon first surfaced in Huila, Colombia and has since been widely adopted in the region thanks to its unique and exquisitely fruited flavor profile. Originally assumed to be a mutation of Bourbon that ripened to a pinkish color, it was recently identified through genetic testing as an Ethiopian landrace. How it arrived in Huila and why it thrives so well there both continue to be a mystery.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAt El Porvenir the Pink Bourbon is picked at peak ripeness, floated in water to remove low-density fruits, and then held intact overnight. The following day the cherry is de-pulped and the seeds are fermented without water for 48 hours. The coffee is then washed clean with fresh water and dried for 24 hours in a mechanical drier held at low temperatures between 68ºF - 86ºF. After stabilizing in sealed GrainPro bags for one week, the coffee is finished in the mechanical drier until the moisture content reaches 10%.
