It used to be that out of all the coffees we buy from Ethiopia each year we would only buy one natural and it was always from them. It also used to be that Sookoo, helmed by Ethiopian coffee veteran Ture Waji, only produced coffee with a natural sun-dried fermentation process. Things have changed a little bit in the last few years, as we have started to buy some natural coffees from other producers in Ethiopia, and Sookoo has branched out into washed and honey processing at their two new wet mills. Still, the fact remains that Sookoo still produces some of the absolute cleanest natural coffees that we taste from anywhere, year after year.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eRipe cherry is grown and picked by 31 smallholding farmers in the Bookissa woreda (village) under native shade canopy, and delivered to the Sawana processing station. After the delivery is sorted and weighed, the farmer is paid above market price and the cherry is brought immediately to raised beds to dry in the sun.
