Local producers grow landrace varieties on small farms that average only 0.1 - 2 hectares in area, and intercrop their coffee plants with native species such as false banana trees which provide shade and soil enrichment.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eProducers transport whole coffee cherries on dirt roads by motorcycle or pack animal to the nearest collection point, where they sell their crop and collect organic fertilizer to bring back to the farm. From the collection point, cherries are taken by truck to the local wet mill for processing.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAt the mill, the coffee is depulped and fermented in cement tanks for 36 - 48 hours, then washed clean with fresh water.
