Andres Torre Ore, a member of the Pangoa cooperative, grows Caturra and Bourbon on a three hectare farm in the town of San Martin de Pangoa, located in the Satipo province of Junin, Peru. After de-pulping and removing “floaters” (underripes and other low-density defects), he ferments the coffee underwater for an average of fifteen hours overnight. Following fermentation the coffee is washed clean with fresh water, and then dried on raised beds under parabolic cover for twelve days.
This is the first coffee we’ve ever bought from the Junin region of central Peru, and it’s a brilliant standout on our offerlist. The flavor is incredibly ripe and juicy, with notes of plum and apple and a densely saturated honey-like sweetness and mouthfeel.
Transparency
This is our seventh year buying coffee from Peru through our partners at Red Fox Coffee Merchants, and our first year buying from the Pangoa cooperative. We bought 10 69kg bags of this lot on a forward contract for $4.05/lb EXW. We scored this coffee an 87.25.
