Telila CWS (coffee washing station) is owned and operated by Mike Mamo, our closest partner on the ground in Ethiopia. At Telila, located in the town of Gera in the Jimma region, Mike and his team buy ripe coffee cherries from local growers and process them with washed, semi-washed (honey), and dry (natural) fermentations. We bought a considerable amount of coffee from Telila this year, including our previous single origin offerings Kecho Anderacha and Wanja Kersa, and a large bulk lot that has been the anchor of our Chit Chat blend for nearly the past 6 months.

We continue this partnership with our latest decaf offering, our first from anywhere outside of Colombia. Like our typical Colombian decafs, Telila is decaffeinated with the “sugar cane” process. This decaffeination method uses ethyl acetate, a natural fermentation byproduct present in all fermented foods, as the binding agent to remove caffeine from the beans. The ethyl acetate used in this process is extracted from the fermentation of molasses, hence the “sugar cane” nomenclature.

We favor this decaffeination method because of its superior flavor to other processes, its use of natural ingredients, and the practice of processing within the coffee’s country of origin using domestic sugar cane. This decaf offering from Telila gives us flavors of strawberry, caramel, and malt.

This is our third year buying coffee from Mike Mamo. We scored this lot 86 points and purchased 5 60kg bags for $5.75/lb FOT.
