Ethiopia Shoondhisa is a natural dry processed coffee produced by our partners Sookoo Coffee in Shakiso, Guji zone. Out of all the coffees we buy from Ethiopia each year we only buy one natural and it’s always from them. Sookoo, helmed by Ethiopian coffee veteran Ture Waji, produces only natural sun dried coffees and they take this specialization very seriously. The result is an incredibly clean cup without a hint of earth or funk.
Ripe cherry is grown and picked by smallholding farmers in the surrounding area under native shade canopy, and delivered to the Dambi Uddo station. After the delivery is sorted and weighed, the farmer is paid above market price and the cherry is brought immediately to raised beds to dry in the sun. These coffees are seriously some of the cleanest naturals we've ever tasted, which we attribute to excellent picking and sorting by the growers, followed by extremely diligent and slow drying in perfect conditions at the hands of Ture and his team at Sookoo.
With this year's harvest of Shoondhisa we taste strawberry soda, lemon zest, and milk chocolate.
Transparency
This is our fifth year buying from Sookoo Coffee through our importer Osito Coffee. We wrote a forward contract in March 2023 to buy 10 60kg bags for $5.90/lb FOT, on a day when the Coffee Commodity price was $1.78/lb. Our friend David Stallings from Osito Coffee sent us a pre-ship sample for approval, which we scored an 88.
