Peru Altiplano is one of our signature single origin offerings, a label that we bring back each season to showcase the coffees that we feel best represent Peru’s “taste of place”. The Altiplano, or “high plain” in Spanish, is the Andean plateau, the roof of South America, and is a metaphor for the way we view the present and future of coffee in Peru.
This version of Altiplano was produced by Fidel Benavides Guevara in the Amazonas region of Peru. Fidel’s two hectare farm, La Galleta (Spanish for “cookie”), sits at a staggering 1946 meters above sea level, and is located within the Alto Mayo Protected Forest. As a result, Fidel places an emphasis on conservation and environmental sustainability in all of his activities on the farm. He grows Caturra, Bourbon, and Catimor varieties in harmony with native trees and other local flora and fauna.
Fidel ferments his coffee in plastic tanks for 85 hours, and dries it in parabolic covered drying houses for 17 days, with some variation to the timing of both processes depending on the weather. We taste a clean and balanced cup with notes of caramel, orange, and vanilla.
