Willian Vasquez Diaz grows coffee on his farm, Finca Alegria, at 1806 meters above sea level in the Junin region of central Peru. After picking, the cherries are floated in water to remove underripe fruits, depulped, and fermented in wooden tanks for eighteen hours. After fermentation, the seeds are washed clean with fresh water and dried on covered raised beds for 18 - 20 days. This lot is 100% Caturra variety and tastes to us like pear and panela (unrefined sugar cane), with a hint of florality.
