The Garcia family and their neighbors in Tablón de Gómez are hyper-aware of the challenges posed by climate change and have committed to preserving the ecosystem that sustains them. They maintain portions of their land as untouched forest and strictly protect the native vegetation surrounding the waterways where their water originates.
Their farming model is one of deep integration. Coffee is intercropped with fruit trees like avocado and lemon, which provide essential shade. This ecosystem is further supported by free-range animals including chickens, pigs, and guinea pigs, whose manure serves as natural fertilizer for the land. They also supplement their income from coffee with banana crops.
The Garcias grow Castillo and Colombia varieties. After a careful and selective harvest, the coffee is processed in cement tanks where it undergoes fermentation for 15 to 17 hours, followed by 8 to 12 days of drying on raised beds. It tastes ripely fruited, with flavors of cranberry, marzipan, and banana.
