We’re very excited to welcome back Decaf Colombia Martír. This has been our most popular decaffeinated offering based on the feedback we’ve received from decaf-lovers. The coffee is produced by El Grupo Martír, an informal association of neighboring small farms just outside of the town of La Plata, in the Huila department of southern Colombia. The farms range in elevation from 1700 - 2000 meters above sea level, where producers grow Caturra, Castillo, and Colombia varieties.

Each farm processes their own coffee on site, using variations of a washed fermentation protocol that was designed and disseminated by the group’s leadership. Immediately after picking, the whole coffee cherries are rested in plastic barrels, which are sealed airtight and capped with airlocks that allow the fruit to off-gas while keeping ambient oxygen out. This low-oxygen fermentation stage lasts for 36 hours and is similar to carbonic maceration in wine-making. The coffee is then mechanically de-pulped and fermented again, this time underwater for 24 hours, before it’s washed clean and dried in covered drying houses.

Each lot produced by a member of Grupo Martír may be sold as a single farm offering or be bulked with coffee from other members, depending mostly on cup quality, profile, and lot size. This coffee is a blend built from multiple members, and decaffeinated with the “sugar cane” (ethyl acetate) process. It’s sweet and pleasantly fruity, with notes of baked apple, cherry, and brown sugar.

Transparency

This is our third year sourcing coffee from Grupo Martír through Osito Coffee. We wrote a forward contract to buy 10 bags of this lot. We scored an arrival sample of this coffee 86 points and purchased 10 60kg bags for $6.75/lb FOT.
